Homemade Lemon Bars In Shortbread

If you ever get that urge to get snacking, then some Homemade Lemon Bars may be the perfect solution for you! They are simple enough to make, and taste absolutely sublime.

 

So without any further ado, let’s get into the nitty-gritty!

What Are You Going to Need?

As usual, there are a few things you are going to need to make this happen – for both the Crust and the Bars! Thankfully, we did the groundwork already, so you can have our list for all that right here!

 

Equipment;

 

  • Mixing Bowl (x2)
  • Baking Tin (of your preferred shape and size)
  • Oven
  • Whisk/Power Whisk

 

Ingredients; 

 

Crust

  • Flour (1 ¾ cup)
  • Sugar (⅔ cup)
  • Butter (¾ cup)
  • Vanilla Extract (2 tsp)
  • Salt (¼ tsp)

 

Lemon Bars

  • Eggs (4)
  • Sugar (1 cup)
  • Flour (3 tbsp)
  • Lemon Juice (⅔ cup)
  • Milk (⅓ cup)
  • Salt (⅛ tsp)

 

That’s the lot! Once you have it gathered, move on to the Step-By-Step, you will be surprised at how easy this comes together.

Step-By-Step Instructions on How to Make Lemon Bars

 

Step 1 – Prep The Shortbread Base

Coat your Baking Tin in butter – this is so the finished product does not stick so much to the tin when you need to remove it later. Mix together all your crust ingredients in a mixing bowl until they are all the same consistency, and then spread the crust mixture evenly across the base of your baking tin. Best results may require a brief pre-bake of the crust before adding the rest – 2-5 minutes at approx 180 degrees Celsius.

Step 2 – Prep The Lemon Bars Mixture

Now, mix together all of your Lemon Bar ingredients! You do not need to cook any of these ahead of time, just get them mixed together. You can do it by hand, however I would recommend a power-whisk for ease. Keep on mixing them together until they are one smooth, slightly goopy consistency. You can then add this directly on top of your base in the baking tin!

Step 3 – Bake It!

Now you can put your full baking tin concoction into the oven! Around 160 degrees Celsius in a fan assisted Oven. Bake for around 20–25 minutes, until the centre is fairly well set. The filling should feel reasonably firm to a light touch (BEWARE, it will be hot). 

Step 4 – Cool and Transfer

Allow the Lemon Bars to cool after removing from the oven for roughly 1 hour. This is to ensure they have set before removing from the Baking Tin. Once removed, you can cut and eat right away, or you can chill it for later! A couple of hours in the fridge really brings that temperature down to a beautifully cool and flavoursome treat.  

Step 5 – Add Any Extras!

You can flex up this recipe with some Lemon Zest if that suits you, or some Confectioners Sugar for a lovely sweet powdery coating! Alternatively, have it as it comes, or pair it with another treat, the combinations are entirely up to your taste!

Step 6 – Enjoy Your Lemon Bars!

That’s that! Your Homemade Lemon Bars are ready to be enjoyed. Serve up, stick on your favourite show/streamer, and snack away!
